Shamrock Bakery and Restaurant Corporation Shamrock is a testament to the Paras Family tree whose roots are from Pampanga inCentral Luzon. The Paras family, who built Shamrock, finally settled in the town ofBarili— a municipality southwest ofCebusome time in the nineteen thirties.
Its humble beginnings are rooted upon its rich history as far back the pre-War era originally as a partnership between Honoria Paras and an Irish businessman hence, the name “” The first store was in the old Compania Maritima building in the waterfront area, near the Carbon market and Cebu City Hall.
After the Second World War, Honoria Paras continued the business in 1945 by establishing a bakery at the former Capitol Hotel on Sikatuna St, CebuCity. By this time, the Irishman had already left the business but the name had been retained. Through the years, the business moved to a location in the downtown area on Mabini Streetadjacent to the Cebu Metropolitan Cathedral rectory and fronting the old University of Southern Philippines (USP) Mabini campus. This was to be it’s home until 1982 when the Archdiocese of Cebu advised the business to relocate as the place was to be converted into a plaza, which today is known as Plaza Hamabar in honor of the Cebuano chieftain who, together with his wife, Queen Juana and 500 of their supporters had converted to Christianity when the Portuguese explorer, Ferdinand Magellan arrived in 1521 to claim the islands for the King of Spain and renamed the islands Las Islas Filipinas.
The bakery then was relocated to Minglanilla and a store had to be established on a small store space beside Plaza Hamabar. In 2009, the store moved to the corner of Mabini and V.Gullas (formerly Manalili)Sts.where it now stands. With its new location, a new store concept was developed. Aside from Shamrock baked products, the store now sells other famous Cebuano products so the customers can do a “one stop shopping” for Pasalubong items. The Mabini store’s present design is also aimed at making pasalubong shopping more convenient – more parking, shorter lines and more product choices. Mabini also houses the accounting office of the company which serves as the administration and coordinating center of the company.
The company also owes its growth and expansion to the enterprise and efforts of Honoria’s son, Sergio “Boy” Paras, Sr., who pioneered the expansion of the business by establishing branches in Cebu and Mactan area. In 1990, Sergio “Boy” Paras Sr., also diversified the business by establishing a 28-room Pension House in its property on Fuente Osmeña when he built a 6-level building. A pasalubong store was likewise established on the ground floor of the building side by side with a “Food To Go” Chinese inspired food service.
Despite the importance of the city, the family also continued to expand in Barili where its roots lay. The Barili operations eventually came to include a 2-storey complex that is now a major bus stop-over, with extended restaurant operations, rentable spaces around and a small pension on the second story for travelers with business in the area like those in the pharmaceutical business, etc. or travelers who are passing through and are visiting relatives or on an excursion in the south-west of Cebu Province.
